Pea Soup with extra virgin olive oil
Need hot nourishing soup on a cold day? Try this easy to make meal …….prepared in just in 10 minutes, this dish will be popular with everyone at your table!
- 2 cups frozen Peas
- 2 small white onions, chopped
- 3 tblsp VIRTUO Medium extra virgin olive oil
- 1 tblsp Thyme chopped
- 1.5 cups of Vegetable or Chicken Stock
- Fresh parsley chopped
- 2 tblsp of VIRTUO EVOO to drizzle over before serving
Chop the onions finely. Add to a pot with 3 tablespoons of VIRTUO Medium extra virgin olive oil and saute until soft. Toss in the thyme leaves and cook until the onions are transparant.
Pour the frozen peas into the pot with the stock and bring to gentle boil. Cover and simmer for 5 minutes (You can use water if no stock available, just add a few good shakes of garlic and herb salt). Remove from the heat and when cool enough add a small handful of chopped parsley and blend to a silky consistency. Check seasonings. Return to pot, and gently re-heat. Serve in bowls, garnishing with a swirl of VIRTUO EVOO. Add chopped parsley and finely chopped prosciutto
Serve with crusty bread.
Makes approximately 3 cups of soup. Easily double recipe ingredients for more servings.
